The venue is transformed into a dreamscape, featuring an interactive installation where guests write their wishes on red ribbons and tie them onto a symbolic wishing tree. As mist drifts through the space, the atmosphere embodies the fluidity of dreams and aspirations.

This is more than a dining event—it’s a celebration of hope, heritage, and the beauty of following one’s dreams. To capture their which and dream mist guest will be able to bring home a small dream mist botanic perfume.

ENTRÉE

Roasted Balmain Bug Rice Paper Rolls

Sliced and presented in-shell, served with perilla, vermicelli, mint, edible flowers and delicate bug meat.

Guests are guided by Luke in making their own rice paper rolls in a shared, hands-on experience.

“Growing up, my family could only afford to make rice paper rolls filled with fresh herbs, as we couldn’t afford any protein. My dream was to one day open a restaurant where I could showcase Vietnamese flavours using premium ingredients and produce.” – Luke Nguyen

This entrée brings that dream full circle,  transforming humble roots into a theatrical, flavour-packed celebration of heritage and ambition.

 

MAIN

Chargrilled Wagyu Picanha With bean curd, betel leaf, native pepper sauce, purple vermicelli and fresh truffle. Cooked live over a hibachi grill with truffle shaved fresh tableside by our chefs. A masterful union of authentic Southeast Asian flavours and premium native Australian ingredients — true Botanic House style.

 

DESSERT

Vietnamese Coffee & Matcha Tiramisu With fresh fruit and tapioca pearls. Scooped table-side from large trays by the chef,  a joyful and theatrical close to the evening. A nostalgic twist on a classic, layered with vibrancy and warmth.
